Big Swerve's BBQ started in a South Jersey backyard in 2020 and grew into a full operation — food truck, brick-and-mortar, catering, and banquet hall — built on one belief: food brings people together.
The Backyard
In 2020, Stephen "Big Swerve" Clark and his wife Darlene started smoking meats low and slow for family and friends in South Jersey. Word spread fast — what started as a backyard weekend ritual quickly became something the whole neighborhood was talking about.
From Hobby to Food Truck
Stephen and Darlene took the leap from backyard to food truck, hitting the streets and building a loyal following one plate at a time. The "cookin' couple" was hands-on from day one — you'd find Stephen personally tending the smoker at every stop.
Putting Down Roots
The demand grew, and so did Big Swerve's — we opened our brick-and-mortar on 201 Broadway in Westville, added a banquet hall, and expanded our catering operation to serve everything from block parties to corporate events. The food truck still rolls.
The Food
Our brisket has a smoke ring people drive across the Delaware River for, and the Jersey Jerk Sliders bring Jamaican heat to a Southern menu. Every dish — from mean beans to fried whiting — is made fresh with the same care we put into that first backyard cook.
South Jersey's Table
NJ.com named Stephen the "King of New Jersey BBQ," and Fox 29, PHL17, and the Philadelphia Inquirer have all taken notice. But what matters most is the regulars who show up every week and the first-timers who leave feeling like family.
